Tony Tokunbo Eteka Fernandez is an International Award Winner, Published Author & Poet, Broadcast Journalist, MC and Youth Empowerment Consultant . He is also The CEO of AFRICA4U and The Founder of Africans in The Diaspora People also see him as a Cultural and Social entrepreneur, which means he is skilled in working with many different communities, bringing people together in successful focused events. Tony has organised many cultural events …involving both BME and mainstream communities. He is skilled in hosting events that reinforce community cohesion and bringing different kinds of people together. He has organised events in The UK, The U.S.A, Holland, Germany, Romania, Malta and Nigeria and has visited over 22 European Countries. Tony has also organised The Black History Month Celebrations at The UK House of Parliament for over five years in a row He continues to promote the true life and success stories of Africans in Europe and Africans around the world and has organised several small scale literary and awards initiatives aimed at empowering young people. He has also spent time as an International broadcaster and was The Producer and Presenter for AFRICA4U International Radio Talk Show at Reading4u Radio Station for nearly three years. Tony has interviewed high profile Members of Parliament, Distinguished celebrities and some of Africas best musicians including Ivonne Chaka Chaka and Kanda Bongoman. He has also been a guest on BBC Radio on numerous occasions to discuss the community cohesion events he organises at UK House of Parliament and also to recite some of his published work in memory of Nelson Mandela, 50 Years Anniversary of The race relations act and major community issues. Tony has also a Guest on popular Radio stations in Nigeria and The States In the last few years he has been very passionate about Youth empowerment, community cohesion and cultural intelligence. Tony was born in South London and has lived in several parts of England and Nigeria . He started writing at the tender age of nine, a habit he expressed with creative enthusiasm. Tony writes Poetry, short stories and proverbs on personal development. He is currently working on his 4th book which will also be his first novel. He is also into Public Speaking at Special events and Social functions and is a Mentor for young people in the UK Community. He completed a Bachelor of Arts degree at The University of Lagos, Nigeria in English and World Literature. He later went on to attain a teaching qualification at The Frances King International Training Institute, South Kensington London, it was here he studied Teaching English as a Foreign Language. He also studied Web Design at The City University in London. He published his first book in June 1999 called “The Beauty in the Dark” (A Collection of Poetry which received critical acclamation in many circles around the world). .Tony’s aim in life is to inspire the young generation and to encourage the youth to make the very best of their dreams and aspirations,. He published a 2nd book in June 2009 called ” The Sound of Running Water” – A Family gift book of proverbs and quotations on Personal Development and Positive Thinking . In December 2009, he published his 3rd book called “One Moment of Peace”.- A collection of Poetry inspired by personal experiences and spiritual growth. Besides the fact that the Artist has won International online awards, he is mostly inspired by Life experience, love, music and cultural awareness. He was Resident Poet at the 5th London Poetry Festival in 2009 and has been a guest on BBC Radio on very many occassions including The famous Anne Diamond Show. He has also been a guest on a few SKY TV stations and several International Radio Stations around The World

I am from Barbados and am a retired SRN, Midwifery Sister, Senior Psychiatric Charge Nurse, Health Visitor, and Social worker.  I came to England in 1960 to work in the NHS at the invitation of Enoch Powel who was then the minister of Health and responsible for recruiting girls to be trained as student nurses in England.

I graduated with BA honors in Anthropology from the University of Bristol in June this year (2018)  and am now studying for a Masters degree in Black Humanities.

I am a widow and mother of three children and seven grandchildren. I am an actress with Breathing Fire a Black Women’s Playback theatre company.

HOW TO COOK EDIKAIKONG – ONE OF THE MOST NUTRITIOUS SOUPS IN AFRICA

EDIKANG IKONG is a vegetable soup that originated from The Efik People of Cross River State, Nigeria .

It is arguably one of the most nutritious soups in Africa

  • 2 lbs Malabar Spinach aka Water leaf
  • 2 lbs Pumpkin leaves (you may use ugwu if you have that available)
  • 3 lbs Goat meat cut into large bite size cubes
  • ½ cup Cooked shelled Apple snails
  • 1 lbs Smoked Shrimp
  • ½ cup Palm oil
  • 2 Red onions
  • 2 Scotch bonnet peppers
  • 4 tbsp Ground smoked dried shrimp aka Crayfish
  • 3 tsp Chicken bouillon
  • Salt to taste

Instructions

  • Slice both onions and scotch bonnet peppers, and set them aside.
  • On low- medium heat in a large stock pot, braise the goat meat with the one of the onions, scotch bonnet peppers, 1 tsp bullion and 1 tsp salt for 30 minutes or until the meat is tender.
  • Half way into braising the goat meat, add ½ a cup of water and stir the meat to prevent in from burning. Keep the pot covered at all times during the braising process.
  • While the meat is braising, wash the Malabar spinach in cool water to get rid of sand and dirt. Pick off the tough stems, but save the tender stems and leaves. Chop and set aside.
  • Wash the pumpkin leaves in cool water to get rid of sand and dirt. Pick off the tough stems, but save the tender stems and leaves. Chop and set aside.
  • Once the meat is tender and is done braising. Set aside.
  • In a deep pot heat up the palm oil on medium heat (be careful not to over heat the oil on high heat) and sauté the other sliced onion for 10 minutes until it is starting to get caramelized.
  • Add in the snails and smoked shrimp, and continue to sauté for another 5 minutes.
  • Add in the braised goat meat and reserve the braising liquid for another recipe. It is a very flavorful stock, and be used for another dish.
  • Add in 2 teaspoons of bullion, crayfish, then add in the chopped water leaves and the pumpkin leaves. Stir and allow to stew uncovered on medium heat for 10 minutes.
  • After 10 minutes, taste the stew for seasoning and adjust the salt if necessary. Turn the heat off and allow the stew to sit for 5 minutes, then serve hot

ROLE MODEL OF THE WEEK, DR TIFFANY HOLLOMAN – HISTORIAN, SOCIOLOGIST AND LECTURER

Dr. Holloman is a Research Fellow at Centre for Race, Education, and Decoloniality within the Carnegie School of Education. She is also Co-Director of the Same Skies Think Tank, a regional democracy organisation in West Yorkshire.

Tiffany is a historian and sociologists who researches the dynamics of gender, race, and power from early modern to contemporary societies. Incorporating methods of New Historicism, Black Feminist Theory and Critical Race Theory, she uses an interdisciplinary approach to better understand government and higher education structures in society. To her, underdevelopment is a human sacrilege leading to superficial hierarchies and exploitation.

Research Interests

Tiffany’s current research delves into the underdevelopment of higher education institutions through its exploitation of racial hierarchies in the US and the UK. Bringing an awareness of Historically Black Colleges and Universities abroad, she seeks to expand on why HBCUs continue to exist and why they are necessary and how they can be used as an example for decolonising curriculums. Furthermore, her work challenges the word, “prestige” in relation to governmental structures and higher education institutions in that historically there is something amiss between ideals and human development. This has enlarged her research and participation to include the politics of regional democracy and devolution.

ROLE MODEL OF THE WEEK – THE AMAZING DR SINYUY GERALDINE BASED IN CAMEROON

Cameroonian born Dr Sinyuy Geraldine trained as an English Language and Literature in English Teacher in the University of Yaoundé I in Cameroon. She earned her PhD in Commonwealth Literature from the said university in 2018 and currently teaches English Language and Literature in English at Government Bilingual High School, Down Town Bamenda. She is also a book review/contributing editor at WordCity Monthly online magazine and a co-editor/contributing author of the poetry anthology, Poetry in Times of Conflict (2020).  Dr Sinyuy started writing poems in her teens and most of her poems and folktales were read and discussed on the North West Provincial Station of the Cameroon Radio and Television Cooperation Bamenda where she was often a guest writer/speaker for the programme: Literary Workshop (A Programme for Creative Writing and Literary Criticism).

Sinyuy Geraldine has had the following awards; Featured Storyteller on World Pulse Story Awards, May 2017; Prize of Excellence as Best Teacher of the Year in CETIC Bangoulap, Bangangte, 23 October, 2010; Winner of the British Council Essay Writing Competition, Yaoundé, 2007; Winner of Short Story Runner-Up Prize, Literary Workshop: CRTV Bamenda, 1998.

 Sinyuy is an advocate for organic gardening and environmental care. She equally runs an online cookery group via WhatsApp where she teaches women how to cook good and healthy food for their families. She is also a lover of photography and spends her spare time taking photos. Besides, she is an entrepreneur and does many little businesses in order to raise money which she can use for her family and also help vulnerable people around her. One of the businesses which Sinyuy does is Proofreading and Copy editing. She edits both academic and non-academic works. She is a volunteer worker at GEH orphanage in Bamenda. Sinyuy is also a talented public speaker. Sinyuy is currently working on her first novel and a poetry book. Gender and the education of the girl child is something that catches Sinyuy’s attention. In 2020 Sinyuy trained a group of women on Portable Organic Gardening and Sustainable Waste Management.  She is currently grooming young poets in her community and has organised a poetry contest in order to encourage these young writers.

 Talking about travels, Sinyuy loves travelling and has visited four countries so far. Covid-19 is one of the reasons for which she has not left her country Cameroon for the last two years. She loves meeting people from different parts of the world and sharing ideas. Music moves her and she is equally a good dancer.
